The Prosciutto di San Daniele Consortium safeguards biodiversity and the local territory, which is home to a special and unique microclimate, essential for the ageing of San Daniele PDO. The microclimate of the city of San Daniele del Friuli is what bestows the typical flavour on prosciutto during the ageing phase.
The Consortium is actively committed to safeguarding the Tagliamento river. Back in 2005 it funded studies to oppose projects for the construction of expansion boxes and in 2018 and 2021, it expressed its opposition to projects for the construction of dams along the river.
The Tagliamento is Europe’s only unaltered Alpine river, making it home to a rich natural ecosystem linking mountain and flatland habitats. Its riverbed is a migratory corridor for numerous bird species.
